They use there wings and the spurs on their feet. Wings are just a distraction, the spurs can hurt.

Farm or domesticated type Roosters defend themselves basically two ways:

1. They "Posture" or stretch up on their legs, expand their plumage to appear larger than life, beat their wings and expand those wings to larger than life to scare an opponent or intruder into submitting to their will or just run away from them.
2. If no. 1. doesn't work the Rooster will attack an opponent directly with it's beak and natural spurs on a downward stroke, feet slashing down for maximum effectiveness on the opponents underbelly and face.

A third way is that they can play dead for a moment and suddenly attack their opponent causing serious deadly injuries.

Non barnyard Roosters are trained to fight in various ways by humans as "sport'. With sharp razor like implements attached to their "Spur" sticking out from the back of their legs. A lot of money is bet among the humans. The rooster looses no matter what because if he looses at any time he becomes "Soup De Jeur" or soup of the day. I have seen 'Humans' kill their loosing bird by slitting their throat and occasionally in the ultimate show of "Machismo" biting off the roosters head with their 'Human' mouth.

With their spurs.
They attack / defend themselves by jumping up and bringing their spurs forward and inward all in one motion.
The weight and velocity of the jump is enough to put a hole in a leather boot.
Personal experience.
The spurs were about 2 1/2 inches long and at least 1/2 inch at its base.
It was not a fighting rooster, just the only male with about a dozen hens.

They fight with their feet for the most part. Roosters have claws on the backs of their legs called spurs that grow longer and sharper as the bird gets older. When they fight they flap into the air and strike at each other with these claws. When roosters fight they aren't kidding around - they can seriously injure or kill each other.
