if i make cheese cake squares today sunday can i freeze them to make them last til wed-friday?

ABSOLUTELY !!

The texture may change slightly turning a little grainy but the flavor will be fine. Be sure to freeze in an airtight container and cover with plastic wrap first inside that container to keep out any funky freezer flavors.
