How long can I keep a bottle of wine in the refrigerater?

I bought a bottle of dry white wine to cook with. I hate to toss more than half a bottle. How long will it keep in the fridge until the next time i use it to cook with?

If you are drinking actual wine and not something like arbor mist, I would suggest getting the cork that you can suck the air out of the bottle with. They carry them at just about any wine and spirits shop. When using them you are able to keep the bottle for a couple of days. Otherwise I wouldn't recommend not keeping more than a day. It will start to taste sour if you wait too long to drink it.

As far as having to waste half a bottle or so. Next use a wine that you enjoy drinking as well as using it to cook with. If you are putting the wine in your food, a glass of the wine will go wonderfully with the dinner that you have just prepared. I like to use a Zinfandel in my Spaghetti, it has a great spice that it adds.

Now you have done it, you have made me hungry. ;)

If you're not much of a drinker, but just want to keep it around for cooking, you can freeze the leftover wine in an ice cube tray and toss the cubes in a freezer bag for storage. It's ruined for drinking after that, but is still pretty serviceable for a sauce.

Why on earth would you keep it in the fridge ?? Never EVER cook with a wine you wouldn't drink. When you've finished with it in the cooking simple ................ neck the rest !!!!!!!!
