I have a dish I invented for salmon that is very unusual and tasty.
In the bottom of a covered glass or ceramic dish mix:
1-2 Tb olive oil and salt & pepper
Add the fish, turn it a couple times to coat
(if it has skin, put the skin side down)
Cover with fairly thinly sliced shallots or onions
Toss a handful of olives on top (any olives or combination of olives will do, I prefer small spanish green olives with pimento, very festive looking - but black olives with a few sliced up greek olives is also very good - If I'm using large olives I slice or halve them)
You can also add a couple tablespoons of capers if you like
Pour a small amount of white wine over all
Sprinkle a couple pinches of tarragon over all
Cover and bake at 350 for about 25-35 minutes til fish flakes
Serve with brown rice and steamed veges and a small green salad.

simply grilled with limes and garlic or try dicing fine mushrooms, (wild if you can get) and red onions saute will a little butter till cooked, seal a piece of salmon, place mushroon mix on top, season and wrap in puff pastry, bake on about 200c for 15-20 mins or untill pastry is golden brown and the salmon is cooked, serve with a tarragon cream.
Or try baked in foil with thyme, lemon and garlic, serve with green beans and sautes new poatoes, lemon butter.
A salsa of winter veg goes well dice into small cubes, 1 carrots, 1 onions, 1 parsnips, 1/2 leek and red pepper, slowly sautes in butter just before tender add some peas and squeeze of 1/2 lime.

In summer, a salad of rocket, roasted cherry tomatoes, good black olives and green beans (toss them in chopped basil, mint, parsley and olive oil)
For this season, try wilted spinach and jerusalem artichokes (boiled, then sauteed with pancetta)- a mustardy sauce works well here..
or braised puy lentils and greens
or go a bit asian, coat one side of the salmon with sesame seeds before pan-frying, serve with mashed potatoes with wasabi stirred through, and soy, chilli and lime dressing

I dont like salmon, but I think Low Country Boil would go with it. Low Country Boil is corn on the cob, green beans, hot sauce, rice, and meat mixed together. Its really good.

Boiled new potatoes with butter and dill or chives if you can find either. A salad and hollondaise sauce or a light lemon sauce would be nice too. I find tartar sauce far to sickly.

if you griddle some french beans and baby tomato's until they have that grilled markings on them, get salmon fillets sprinkle with sea salt and drizzle with olive oil. put them all in an oven dish at 180deg for 12 mins comes out just lush. make sure skin side up. happy eating

I usually light fry it on a pan, when it's nearly cooked, put in some sauce (soya sauce and sugar) to let it penetrate into the fish. Add spring onions before you turn off the fire.
alternatively, if you don't like spring onions, when the fish is cooked, add some mints on the top. It looks great on the plate.

a lemon butter sauce and any type of fresh green veggie for a side. Asparaus or steamed broccoli drizzled with lemon juice are excellent.
