Extract has alcohol in it as well, though very little. When you heat up extracts or alcohol, the alcohol gets cooked out from the heat. So if you're serving children or former alcoholics, you'll be fine. As long as the recipe you're using it for is a baked recipe, not refridgerated.

You can use the rum, you could also use amaretto to give it more of a smooth nutty flavor, or just use vanilla or almond extract. They both go good in recipes that call for rum.

You can use the rum in place of the extract. If you are worried about the alcohol content heat your rumm (being careful because it can catch flame) and cook the alcohol out before you use it. That way you will have the rum flavor but not the alcohol. An extract such as pure vanilla extract is made with a form of alcohol anyway.

You could use a little rum unless you're feeding children or recovering alcoholics. Rum is made from molasses, so you could put a little molasses in the recipe instead.
