I need to make some finger sandwiches or a tray with crackers, veggies, meat, etc. for a Christmas party. I am looking for a good recipe for chicken salad spread for sandwiches, or to be eaten with crackers. I prefer the kind similar to the storebought ones. I like the smooth consistency with a slightly sweet taste and no fruit chunks in it. I dont want a link to any fancy recipe with ingredients I have never even heard of, just a simple recipe, or tell me how you make yours. I have bought the precooked canned chicken breast meat because my time is limited today.

This is good for the holidays:

I just open and drain the cans, dump in a big bowl, mix with mayonaise (usually a heaping tablespoon per each small can) and add salt and peeper to taste, some slivered almonds, and dried sweetened cranberries (i.e. craisins)

as sugar pie said...the best is simply chopped chicken, celery, mayo + salt and pepper. "light" mayo works great too! (I use frozen chicken tenders - white - that I cover with water in dish and cook in microwave turning tenders over once 25 min then about 10 min more or no pink) then slice "against" the grain and chop ~ very moist and tender!

for finger sammies, it's simply white meat chicken, chopped, minced celery, S&P, and a bit of mayo to hold it together. simple.
