Red potatoes with their skin make an excellent potato salad. If you're looking to try something a little different that has a sweeter taste, I'd recommend adding a sweet potato to the salad.

I make a sweet potato and red potato salad all the time. Just boil the potatoes for a few minutes 'til tender, drain, add salt, pepper, and lemon juice (or a vinegarette), and serve over baby spinach and cucumber. It's delicious!

I prefer the red potatoes as all you have to do is wash them and cut leaving the skins on and they are available all year round. Like using new potatoes better but can't get them all year round. The red also gives the salad a more colorful look. Try not to over cook any potato as the salad will go mushy.

"New" or white potatoes. Red ones are good, too. Russet and baking potatoes are the worst.
