Well, here are two theories:
Maybe your boyfriend has a need to see himself as a "Knight in Shining Armour" or "Prince Charming" type, in which case his calling you a "Princess" is merely a way to help feed his own fantasy of his desired self-image.
Your boyfriend might have been raised with a very limited stereotype of what a girl should be like, or how she should be treated.
Either way, while it's flattering, I'd be careful - why? Because he might not be seeing you or dealing with you beyond what this role implies to him - he could be trying to "cubby hole" you without even knowing he's doing it.
The question I'd ask myself is whether he seems to see and accept any behaviors or emotions from you that don't fit into this ideal "princess" role.
If it's merely a complement and a nickname, then it means he puts you on a pedastal: but a pedastal is a hard place to stay on, and to keep a real relationship going you might need him to be more realistic about who you are.
Talk to him about it, you never know, communication is vital to any real and lasting relationship, dare to try it and see how it goes.

Just another expression like sweetie or honey, really.
My husband used to call me Princess - usually when he was in trouble... :) It is sweet really. when he wasn't calling me 'petal' in front of our friends for fun. I call my boyfriend "my aryian pudding" as he is tall blonde and germanic. He gets a laugh out of it. It's all fun.
Oh and Tkatt00, why don't you stop answering questions that are unsuited to your exulted intellect.
