Currently I do weights down the gym 3 times a week:
Tuesday: Chest and Triceps
Thursday: Back and Biceps
Friday: Legs and Shoulders

But I'm finding I can't always do Fridays and the only days I can really do is Tuesdays and Thursdays, what is the best way of doing chest, triceps, back, biceps, shoulders and legs spilt into 2 days?

try this routine:

WORKOUT 1

Front Squats, Back Squats, or Overhead Squats
Dumbbell Bench Press or Barbell Bench Press
Barbell Rows or Dumbbell Rows
Barbell Curls, Dumbbell Curls, or Close Grip Underhand Chins
Grip or Ab Exercise

WORKOUT 2

Barbell or Dumbbell Overhead Presses
Deadlifts
Dips
Wide Grip Chins
Grip or Ab Exercise

with this routine you are doing a full body workout each day, but targeting different muscles so that you dont over exert them.

Workout 1 targets leg's (quads), chest (with tricep assist), upper back, and biceps (with lats assist).
Workout 2 targets shoulders, lower back (and hamstrings), triceps and lats (with bicep assist).

I had the same problem. Buy yourself some free weights for your home. I've gradually built up a set over time at home and now I rarely use the gym at all. Plus the gym fees I've saved have helped me get a pretty decent home gym. Plus plus, I now get to choose what irritating music pumps out the speakers. Plus plus plus, I get a better workout now cause I can do that extra hour or two when I've got some free time.

You need to work everything on Tuesday and Thursday. If you work harder one day make it thursday this gives your body 4 days to recover
