3 days in Hong Kong is a whirlwind tour at best. I always tell people to skip the parks like Disney or Ocean Park for when they have more time. You can buy the mall stuff in any other malls around the world. So with that said. Here is a list of "must do" unique to Hong Kong and links for your own research and considerations.
1. Ride tram to Victoria Peak to look down at the harbor, tour and shop in the area and more.
2. Ride the Nong Ping Skyrail (NP 360) to see the outlying areas and the big island "Lantau Island". Tons of activites to chose from along the way. Try and take the bus in gettng there for a bonus scenic ride.
3. Ride the Star ferry across the harbor at night to see the lights and laser show from the signature buildings on both sides of the harbor.
4. Do your shopping at Tong Choi Street "Ladies market" (don't let the name fool you, it's NOT just for ladies) for day, and Temple street for night. Do a walking tour of Tsim Tsa Tsui area if you got the stamina.
5. Lan Kwai Fong, a sub-compact but complete package for dining, music, drinks and club. near the Central district.
6. Try as much authentic food as possible. The dim sum and HK style cafe are unlike any other in the world. (Don't worry, tales of dogs and babies are highly exaggerated in HK)
7. Ride on as many public transportation as you can find.
There are many, from train to tram, bus to vans, triple decked ferries to jet foils, helicopters to miniplanes.
Shopping can be even cheaper if you have time to go 1 1/ 2 hours north into Shenzhen. And gambling, male sin city Macau is only 45 minutes west by boat across the Pearl river delta.

I would strongly suggest that you visit Mongkok, you can
get there by MTR (METRO RAIL) get off and walk for a
few minutes to Women's market, you can't miss it. (east
of the station). The other place is Causeway Bay, get off
at this station and the whole area is a shopping paradise.
Another place is Tsim Sha Tsui for cameras and electrics.
Another suggestion is to get a 3 day tourist ticket at the
MTR station and you can travel as many times as you
like without bothering to get coins etc. and it is especially
promoted for tourists. So have a good trip, beware of
pickpockets and Merry X'mas.

Depends on what you want to buy. Langham Place is one of the newest malls and is very popular. It is also within walking distance to the open air Ladies market- lots of women's clothes, accessories,...
Causeway bay has a high concentration of shops as well.
