Health wise ; Less sugar, less fat, no milk. just more cocoa which means more of the goodies that are in it.

Taste wise; well that's a personal choice.

Better in what way? If you mean health its obvious. Milk chocolate has dairy ingredients in it which we should all know are bad for us,not to mention lots of sugar, while dark chocolate, as long as it isn't filled with sugar actually is quite good for you. It has anti oxidants in it that help lower blood pressure. The milk actually interferes with the absorption of the antioxidants. I've stopped eating all junk food lately and I actually find dark chocolate at 75% cocoa to be quite sweet. Once you cleanse the crap out of your system you don't even like the junk food anymore.

There are antioxidants in dark chocolate. But the percent of cocoa should be at least 70%. Milk interferes with the benefit of dark chocolate.

"Dark chocolate -- but not milk chocolate or dark chocolate eaten with milk -- is a potent antioxidant, report Mauro Serafini, PhD, of Italy's National Institute for Food and NutritionNutrition Research in Rome, and colleagues. Their report appears in the Aug. 28 issue of Nature. Antioxidants gobble up free radicals, destructive molecules that are implicated in heart disease and other ailments.
"Our findings indicate that milk may interfere with the absorption of antioxidants from chocolate ... and may therefore negate the potential health benefits that can be derived from eating moderate amounts of dark chocolate."

The darker, the more chocolate is in it, by volume.
