Can Bread Improver be used in bread machines? I can't get bread flour or glutens. Will Bread Improver help when using ordinary flour? How much should I use? HELP!!!

Yes you can use bread improver in your machine, talking from a master baker of 61years. The reason bread improver is used now, is because they take something out of the flour as it is milled, only to add the improver to make your bread last longer than it normally would.Mostly for the big concerns who make large quantities for the supermarkets. They are now introducing it back in the UK. Why don't you go to a health food store and buy the real stuff to make your bread. To answer your other question, to a pound of flour use half a teaspoon. Do use not use cake flour as it is not strong enough, and your results will be not as you would like them to be. Good luck in your venture.
