A nice cut of Topside of Beef - which is clear of veins and little fat and slowly cook in the oven for 4 hours if you dont want a crispy edge cover in tin foil and then remove for last 20 mins of cooking.
The meat will be soooooooooo tender you will not need a knife to slice it with. Serve with your favourite veg and some horseradish ssauce and gravy made from the juicers and feel the meat melt in your mouth

Well I guess you wan't to roast something, so that limits it down a bit....
try meat potatoes, and two veg..
no seriously,get a nice bit of venison, bambi burgers.. don't roast it beond rare as it dries up too much. nice thick cut Bacon over the outside helps to keep it moist, but avoid smoked and too salty. , some roasted spuds and parsnip, steam a few aspargas spears in butter with some mustard seeds in it, and make the cooking juices into a gravey with a sweet red wine, some cornflower and some crushed cranberries. I also like a few peti pois, to add colour

Seeing we are all going to be eating turkey for the next two weeks, what about a nice gammon joint? you can have the crackling on top by rubbing salt into it and baste it with some honey. erved with roast potatoes, yorkshire puddings, (Aunt Bessies) and veg of your choice. What about a nice chocolate mousse for pudding?. Gosh my gastric juices have started getting excited now! Enjoy!!!! serve with some German wine like Hock.

it could be a roast leg of mutton (older lamb) if i ought to discover the money for one and devour my way by skill of all of it, so I settle for the shank. With that i'd have roast parsnips, pumpkin, kumara, yams, potatoes (even with I actually have) with that i'd have some eco-friendly peas, and both a hand-crafted warm minted sauce, or pan gravy.

Nice traditional joint of pork I'd say, unless you are Jewish of course, with crackling, apple sauce. Yum. I'm having a turkey crown from m&S as we're doing an early christmas for my mum and dad who won't be joining us on christmas day this year.

I had a roast duck last night and it was delicious. This was one we bought raw and then cooked, not one from a Chinese takeaway.
