White popcorn has a more subtle flavor, and is lighter in texture when popped. Yellow popcorn has a nuttier, sweeter, "tortilla-chip" flavor quality and is more dense. I personally prefer white popcorn with just a bit of salt and butter, but yellow goes better with caramel, chocolate and other candies.

It really is not about the color, both yellow and white corn will look white when puffed. Yellow kernels are round like pearls, white kernels are more oval, getting closer to rice shaped, and smaller. When popped, the white corn is smaller puffs than the larger yellow variety.
White is also sweeter, and yellow has more of a corn taste.
Movie theaters tend to use yellow, since it s larger size means they can use less popcorn to fill up a tub that will the smaller white variety, and make a bigger profit.
If you want to make authentic movie theater popcorn use the yellow variety, with Flavacol seasoning and coconut oil, both of which are needed to get that theater popcorn taste.

White popcorn is smaller, aka "rice popcorn". You get less puffed material so you eat more kernel shell parts as a result. But that's actually very good for your health since most of the nutrition is in the kernel shell and is quite good plain. Yellow popcorn is a larger type of popcorn, prefered by movie theaters, but movie theaters generally don't add butter to popcorn. They add beta carotene for yellow color to coconut oil... and a lot of artificial flavorings and tons of sodium. Without all the salt, it actually would be fairly healthy to eat. But they ruin it with excessive amounts of salt.

Yellow popcorn tends to be the more unnatural kind that you get at movie theatres where they heap on the butter, although there's a lot more in it than just butter.
The white popcorn is what popcorn looks like before anything is put on it, that's what you get when you have your own popcorn popper which doesn't involve the microwave. Then, you add as much butter and salt (natural ingredients) as you like.
The white popcorn is definitely the healthier option.

Yep, the color depends on the flavoring added. If there were difference in the natural seeds, they wouldn't be distinguished by the names 'butter' and 'salty' they'd have names relating to different corn plants! :)
