Try these,very simple 6 ingrediants or less dishes.
Burritos
1lb.ground beef1(15-oz.)can ranch style beans,
drained
1/2 cup.rice
1 cup Ro-Tel tomatoes with green chilies,undrained
1 dozen tortillas
In a skillet,brown ground beef,drain liquid.Add beans rice and tomoatoes.Cover;simmer until rice is tender.warm up tortillas.Put meat in tortillas.If desired,add sour cream and grated cheese.
or
Red Rasberry Salad
1(10-oz)package frozen red rasberries
2(3-oz)pkgs.red rasberry Jell-0
2c boiling water
1(12-oz)can frozen pink lemonade concentrate
1 pint.Vanilla ice cream
Drain juice from rasberries and reserve it.Refrigerate overnight.Dissolve Jell-o in hot water.Add lemonade and rasberry juice.Then add ice cream and rasberries.Freeze.Yield 10-12 servings.

Easy Cheescake
(my favorite)
2(8-oz.)packages cream cheese,
softened
1/2 cup.sugar
1/2 tsp.vanilla(or 1/4)
2 eggs,beaten
1(9 inch)graham cracker pie crust
Using an electric mixer,mix cream cheese,sugar and vanilla.Add the eggs;mix until blended.Pour into pie crust.Bake at 350 degrees for 50 minutes or until center is almost set.Cool.Refrigerate for 3 hours or overnight.
Variation:add 3/4 cup mini choclate chips after eggs are added.

My husbands in the Navy and away HEAPS, so i am an expert at meals for one....
2 minute noodles....my fave - try making your own sauces & dressings to go with them, they are great!
Mashed potato toasted sandwiches
big pot of spagetthi bolognese (i eat this a few nights in a row) or even fried rice - these two are good to freeze too so on the nights when you dont feel like cooking you can pull them out of the freezer, nuke it in the micro & dinner is served!
Any pasta or rice dish is excellent....bulk is good....as these can be frozen...
home made pizzas are excellent too, just buy the small muffins & cut in half, add your topping, grill for a few minutes & presto!

Pannini Grill sandwiches, with any filling to suit your taste, that can be either a meal or a snack.
Also, pasta, rice, steamed vegetables. Remember pasta sauce can be frozen so make a large batch and then use as you need to. You cook up plenty of rice, store in the refrigerator and use as you need to, same with vegetables. Once steamed they can be kept in a sealed container and then re-heated in a microwave.

Season a piece of chicken breast with vinegar, garlic powder, onion powder, lemon pepper, and sazon seasoning. Very Quick. Broil it in the oven. If you are trying to make an entire quick meal, buy frozen or fresh vegetables, make enough for your meal, and maybe make a side dish like, a potato, lipton flavored noodles, or rice.

i live alone am a BAD cook,i have no patience n tend to 4get about it if i sit down.pasta etc is great n easy,but wot i'm really into as its tasty n healthy is veg stirfry;
hotplate on full,wok with small amount of water in,
chop broccilli while heats up,add broccilli,
chop courgettes,add,
chop pak choi,add,
the water will be about gone now so add some oil[water helps broc cook,n reduces oil required]
chop peppars,add
add noodles[not the dried kind,udon are my fav]
chop spring onions,mushrooms,add
pour on some soy sauce n just keep stirring
VOILA!!!
you dont need to use all these veg whatever u like,it works for me as takes bout 10mins n all times in easily,enjoy

I live alone and cook all the time. A couple of chicken thighs, oven fried, with some rosemary roasted potatoes and carrots in marsala....yumm. That's one of my favorite meals. I do a lot of pasta and risottos also.

i like near east rice pilaf, it usually only lasts two meals. i take a chicken breast, cut it into cubes sprinkle with salt pepper and garlic and satuee. then just cook the rice in the same pot and the chicken. it's a nice chicken bowl.
you can use any rice you like, like rice a roni or uncle bens. i like the ones with seasonings. it mkaes life easier
