Think are instant potatos just dried potatoes or are they something else? and if we have instant potatoes why can't we have instant broccli or carrots?

Instant potatoes are real potatoes from which they have removed the water. You add that back in when you make them (along w/ milk, butter, salt, other flavorings...) Most people like mashed potatoes. But most do NOT like mashed carrots or broccoli, and that is the only way to dehydrate those foods. So adding water back would make baby food. Yuck!

You may have had some bits of dehydrated broccoli or carrots in an Uncle Ben's rice mix, a Rice-a-Roni packet, Lipton Noodle dishes, ot those dry noodle soups in a styro cup to which you add hot water. Did you like those little hunks of veggies? Now imagine that a baby carrot size or a broccoli floret... THAT's why they are not dried!

Instant potatoes are nothing more than dehydrated potatoes. the water is taken out and the results pulverized and powdered.
