Wraps are good. You can also slice up whatever meat you had from dinner the night before (grilled chicken, perhaps) and make a salad to go from store bought salad mixes. It takes no time to prepare an extra serving at dinner time and put in some Tupperware for lunch the next day.

I've done this..buy lots of those small plastic containers that will stack on each other, cheap at walmart.then sometime on the weekend I make potato salad, veggie soup, cheese spreads, sliced cucumbers or celery, canned or fresh fruit, tuna salad to go with crackers, stuff I really like, that's the secret and then load up the fridge and when it's time to go to work just fill up my little 6pak cooler and go. I like those small bottles of choclate milk too and potato sticks in the little cans and deviled eggs or boiled will last a couple days in the fridge. Hope this helps.

After you eat supper, put some in plastic containers and into the fridge. Then, in the morning throw it in your lunch box with some ice packs and you are set for a quick lunch that is not a sandwich.

1)
In cheap baggies:
--chopped romaine lettuce
--croutons
Bottle of Caesar dressing (keep at work in fridge)
Big zip-loc baggie.
Throw lettuce, croutons and some dressing in the big ziploc and shake. Eat out of the bag!
2)
Chili, tortilla wraps.
3)
Lunchmeat rollups. No bread necessary!
4)
fruit cup
5)
Chicken salad:
One 1" slice of chicken lunchmeat, cut into 1/2" cubes
1/4 box of cheap frozen baby peas
1/2 cup or so of celery, chopped small
Couple tablespoons mayo
Couple tablespoons of shredded or matchstick carrots
Cooked pasta (if desired--any kind!)
My mom likes to add green grapes sliced in half the long way
Stir!
6)
Try the 20-grain (or whatever--lots of grains) breads. They're really VERY good and make sandwiches taste very different!
7)
Liven up your sandwiches:
--Real turkey (leftover) with a spread made of half mayo and half cranberry sauce (mix a little bit so cranberry sauce still lumpy)
--Roast beef with mayo that contains a touch of horseradish. Try it in a tortilla wrap

A caprese salad is a great light lunch with a piece of good bread. Slice tomatoes and fresh mozzerella cheese and layer in a container. Sprinkle with fresh chopped basil and extra virgin olive oil and a little sea salt.

Leftovers from dinner the night before are always good.
Keep rice and beans in the fridge. Cook chicken or pork chops.
Check Cooking Light's website for quick, healthy meals for dinner or lunch.

The easiest thing I can think of is to make a little extra when making supper the night before and taking that with you. That's what I do for my husband.
