I'm actually looking for two meal ideas. I am looking for a yummy, make ahead breakfast for Christmas morning. That way I can get up, put it in the oven and it will ready when we're done with presents. Also, what are some alternative ideas for Christmas dinner. We don't want turkey or ham. We considered a roast chicken but decided against that as well. What else is there? I'm open to all suggestions. Thanks!

You could make a breakfast casserole the night before, and pop it into the oven the next morning--that would be fast -- add biscuits, fruit, coffee, juice, etc. Dinner--hmm... how about a roast, or a prime rib--yum!!!

My family likes this make ahead casserole but I don't know exact amounts. Layer bottom of buttered casserole with chunks of bread, french or white is best, layer generously chopped ham, cheese , onion,a little parsley maybe, then beat up 3-4 eggs with some milk or cream and pour over top. Then refrigerate over night. Before baking in the morning, layer grated sharp cheddar over the top. bake at 350 just til bubbly and starting to brown around the edges, about 20 minutes. Rest for 5 min and serve with fruit of some sort. If you are a cook you can probably figure it out.

I like the prime rib idea for dinner or maybe a beef tenderloin. Here's a recipe you make the night before for breakfast. Actually, it sounds really good. Who doesn't like eggs - sounds more like a giant omelet of sorts but check it out....

Prepare this sausage-and-egg dish on Christmas Eve while the kids are setting out milk and cookies for Santa. Refrigerate it overnight, then pop it into the oven on Christmas morning for a quick and easy holiday breakfast.

For Christmas breakfast - how about a quiche with a side of strawberries and sliced oranges. Add some green and bell peppers for color. For dinner, I am going for a turkey breast with wild rice stuffing, back in tyme and garlic and smothered in a portabella garlic cream gravy. Oh don't forget a nice bottle of wine and some warm cider for the kittys. Send me an email it you want recipes. by the way EASY!

For Christmas Breakfast, just limit it to bagels and pastries no cooking needed. All you have to make is the coffee and coco. For Dinner, as an alternative to Turkey . try a Roast Lamb or veal Dish. For recipes try http://www.epicurious.com/

a whole baked fish or a big rib roast. roasted red potatoes for beef or rice (yellow spicy or pilaf) for the fish..

a nice big green salad or your favorite vegetables and bread, of course.

and don't forget desert. you can make a tiramisu in advance or an apple/cranberry crisp.
