The other day in the teachers lounge(I'm a middle school teacher) I picked up a great Christmas dessert recipe that might do just the trick. Ive heard it called "Cracker Candy" and the result tastes something like a chocolate and toffee covered pretzal.(Yum!) The recipe is incredibly tasty and easy.
Recipe: Cracker Candy
Ingredients
1 Cup Butter
1 Cup Brown Sugar
1 Box Saltine Crackers
1 12 oz bag of chocolate morsels(any flavor)
1. Preheat the oven to 350
2. Line a baking pan(one with sides) with foil. Cover the entire baking pan with saltine crackers leaving as few gaps as possible.
3. In a pot bring 1 cup butter and 1 cup brown sugar to a boil and cook for 3 minutes.
4. Pour the butter brown sugar mixture over crackers and spread evenly.
5. Bake cracker-sugar mixture in the oven for 8-10 minutes until bubbly. Be careful not to let it burn
6. Take out of the oven and immediatley pour the entire bag of chocolate morsels on top of the crackers. When chocolate melts spread evenly and let cool for about an hour.
7. Put baking pan in the fridge until the mixture has hardened and cooled.
8. Break into pieces and enjoy!

This is a simple recipe from my Taste of Home cookbook: ( I guess you could probably replace the blueberries with cherry or strawberry, for a more Christmas-y look) BLUEBERRY ANGEL DESSERT 1 8 oz pkg cream cheese 1 cup confectioners' sugar 1 carton (8 oz) cool whip, thawed 1 prepared angel food cake, cut into 1 in. cubes 2 cans (21 oz each) blueberry pie filling In a large mixing bowl, beat crm cheese and sugar. Fold in cool whip and cake cubes. Spread evenly into an ungreased 13x9 in. dish. Top with pie filling. Cover and refrigerate atleast 2 hours before cutting into squares. Yield: 12-15 servings. I really wanted to make this for a Christmas gathering, but my gramma was already making an angel food dessert.

I just got done making a batch of these for my husbands Christmas party. They are so good that I couldn't keep him and the kids out of them! It is really easy to make and takes very little time.
Makes about 24
1 cup butter or margarine, melted
2 cups graham cracker crumbs
2 cups powdered sugar
1 cup peanut butter, crunchy or smooth
1-1/2 cups semisweet chocolate chips
4 tablespoons peanut butter
In a medium mixing bowl, stir together butter or margarine, graham cracker crumbs, powdered sugar and 1 cup peanut butter until well blended. Press into the bottom of an ungreased 9 x 13″ baking pan.In the top of a double boiler over hot (not boiling) water, melt the chocolate chips with the 4 tablespoons peanut butter, stirring occasionally until smooth. Spread on top of the mixture in the baking pan.Refrigerate for about 1 hour before cutting into bars.
They taste like a reece peanut butter cup. Yummy!!!!!!

Snowballs!
These are very easy to make, and you can make them in advance!
Take plain vanilla ice cream and let it soften a little. Scoop ice cream into balls the size of tennis balls. Take the ice cream balls and roll them in grated coconut. (the kind you buy preshredded in a bag)
If you want to be clever, you can buy green cake decorating icing in a tube, and draw little holly leaves on the top. The get some small red candies to add to be the berries!
Keep snowballs frozen untill ready to serve.
so easy, so yummy and so clever!

Buy a seedless watermelon, cut it in half. Get a melon baller, and scoop out melon balls. Save the shell of the watermelon. Do the same thing with a honeydew melon. Stick them onto skewers, rotating the watermelon and honeydew. Using the pointy tip of the skewer, poke them into the watermelon shell (turned upside down), and you have a wonderful, feastive arrangement, and a light, refreshing desert for the table. I did this for 4th of July (using watermelon, pineapple, strawberries and blueberries), my family LOVED it! Add other fruits if you'd like. I think it will become a tradition! Good luck!
