You can use buttercream icing (directions below), jam, raspberry syrup, chocolate syrup, chocolate/peanut butter spread (directions below) or chocolate pudding.

To make butterncream icing, mix together a 1 lb. box of powdered sugar, 1 tablespoon of softened butter or shortening, 1 teaspoon of vanilla (you can substitue another flavoring such as almond, lemon or strawberry flavoring), and enough water or milk to make a spreadable consistency. Start with 1 Tablespoon of liquid and add more a little at a time, then stir, until you get the consistency you want.

For chocolate/peanut butter spread, melt 1/2 cup peanut butter in the microwave on medium heat about 30 seconds. Mix in 1/2 cup chocolate syrup and spread.

Try warming some nutella in the microwave for a few seconds and spreading it on. You can find it in the peanut butter section. It is a chocolate hazelnut spread. If chocolate is not your thing, try fresh berries with a little powdered sugar and a splash of rum or brandy or better yet some berry liqueur. Happy cake making!

Diferent jams are always an interesting middle filler for cakes

Chocolate cake with raspberry jam filling and choccy icing is excellent!

Be creative and have fun with it....a homemade cake is always superior to a purchased cake (even if it looks like the ugly stepsister) ;)

Dependiong on the cake, something whipped with cream cheese would be wonderful!

Lemon pie filling, some strawberry, raspberry or peach jam, even some chocolate pudding--any one of them beaten into cream cheese would be great!

Ice cream! Just wait for the cake to cool, scoop some ice cream into a hollow into the cake and put it into the freezer.

Use dreamwhip, you know that packaged whipped topping that you make with milk? Tastes so yummy and not as sweet as icing. In fact it makes a great icing too.
