Make a trifle w/ them... layer pudding, mousse, whipped cream, adn maybe some cake cubes w/ fruit, candy pices, or whatever sounds good.
Or use them as a crust fora bar cookie... instead of graham cracker crumbs. Like the "Magic Cookie Bars" (aka 7-Layer Cookies) or "Mississippi Mud" pie (layered dessert w/ choc pudding, cool whip, pecans)

I once came across a recipe for pie with a graham cracker crust. Depending on what kind of cookies you have, you might want to just crush them, and use them as crust for some sort of pie. :)
