Like the Euro, British Pound, or the Japanese Yen, you can easily exchange U.S, Dollars for local currency anywhere in the world.
RMBs are difficult to work with outside of the Peoples Republic of China. In fact, it was fobidden to take the currency out of the PRC until a few years ago. The Chinese authorities fear trading their currency on the open market would lead to a rise in its value and create problems for their exports. While foreign banks don't like using a currency whose value is determined solely by the state (for obvious reasons).

Depends, for now with all the government regulation, I'd recommend if you have a choice, you would want your salary paid in US Dollars but everyone knows with the trade surplus, the RMB are way under valued and I believe the currency will get stronger but that depands on the Chinese governement because even tho' they are part of WTO, they don't really believe in free trade or deregulation of the Chinese currency.

depends on where you are:
in china, i'd prefer converting US dollars into RMB because dollars are worth more. (USD$1=7.91 RMB)
so if you're an american going to china, you have quite some money on your hands there. ;]
