BAKED CATFISH

3/4 c. seasoned bread crumbs
1 tbsp. tarragon
1 tbsp. lemon & pepper seasoning
1 tbsp. thyme
5-6 catfish fillets
6 tbsp. reduced calorie French dressing
Vegetable cooking spray
1/2 c. shredded Swiss cheese

Combine bread crumbs, tarragon, thyme and lemon & pepper seasoning. Brush fillets with French dressing, dredge in bread crumb mixture. Arrange fillets on a rack of a broiler pan that has been coated with cooking spray. Bake uncovered at 450 degrees for 10 minutes. Sprinkle fillets evenly with cheese and bake an additional 2 minutes.

dip the catfish in some egg and milk mixture , then put in a bag with season and flour and shake and bake...or buy the shake and bake stuff.

it depends on the cut of the fish
if it is whole (minus the head) just genorously sprinkle cajun seasoning inside and out. pack a little butter in the cavity and wrap it in tinfoil and bake until the fish easily flakes
