Yes, it is healthier to bake rather than fry anything, but catfish tastes the best fried. If you have fillets, you can just add about about an inch of oil ( I only like to use what is necessary since frying is unhealthy in the first place) in a pan and fry them. If it is steaked, or nuggets I suggest you deep fry, which just means you have enough oil to cover the fish completely. You can use a medium to large sauce pan depending on how much fish u and oil you have. Put a couple of eggs in a bowl and beat them. Get some cornmeal add some seasonings and dip the fish in the egg then the cornmeal and put in into the grease. Fry until nicely browned turning only once in the pan and no turning is necessary when deep frying. You can also buy fish seasoning at the grocery store. Andes is the best, then Zatarains, stay away from Golden Dipt.

Any true southerner would never dare to cook a catfish any other way than frying or in catfish stew.
Try this for your frying... Skin, clean and rinse fish in cold water.Put about 1/2 pint of buttermilk and one egg and mix together in a bowl. In another bowl mix together about 1 cup of bread crumbs(crushed fine), 1 teaspoon of corn starch,
1 teaspoon salt and about 6 grinds of black pepper. If you like a little heat add a little red pepper. While you are preparing this heat your favorite frying oil to about 370 degrees. Immerse the fish in your buttermilk mix then dredge it through the dry mix. Fry until golden brown. Do not overcook...it will make the catfish tough. Blot dry onsome paper towels and serve with hush puppies and fresh coleslaw. Enjoy!

I think it is better to fry. I like to deep fry it, (for that you need cooking oil, flour, salt & pepper), cut up the catfish in small chunks, roll in flour with s&p drop into hot oil, when rises to top& light brown & crispy it's done. May have to turn once, I use canola oil, gives a better taste. To pan fry, basically same only 2-3 inches oil, make chunks a little bigger, or fillet. Some people buy batter mix, or make batter, but I prefer this method, and the taste is wonderful!

My hubby caught a 52lb catfish and we had one heck of a fish fry!! He dipped the nuggets and fillets in an egg wash (egg and milk, beat together) and then Zattarans Southern Fish Fry and deep fried it. Was delicious and we served it with coleslaw and hush puppies! If you use peanut oil you can use the same oil to fry the fish and the hush puppies in the same pan. Was so good!!

Danielle I live in NC and we eat a lot of catfish here.
Catfish is best fried.....salt and pepper style
The latest craze in all our best restaurants is salt and pepper catfish. It is simply delicious. Take your catfish filets and coat with egg roll the fish in cornmeal mixed with a little flour and lots of salt and cracked black pepper. Fry it in hot oil until done. Enjoy
Don't forget the slaw and hushpuppies

If you are frying, select a good cholesterol free oil (look for the tick from the heart foundation). Get the oil really hot and cook your fries in batches. Do not crowd the pan as it will reduce the heat of the oil. The hot oil will seal the outside of the fries and reduce absolution. Remove and drain and turn out onto paper towels, then put in a warm oven until they are all cooked. If you use the oil several times for different foods the oil will take on the taste of them. The heat is the main thing and to avoid splatter dry them as well as possible and have a cover handy.

Unless you're a health nut, do not "bake" catfish, period. Butter milk in a dipping pan with catfish, refidge 1 hour, get your nails done. Cracker crumbs, bread crumbs, cornflake crumbs any of them, S&P, Tbs (or more nobody's watchin) Creole seasoning, stir with your fingers, skillet hot, oil, any kind, 1 Tbs butter, you'll see it start to smoke, cat from buttermilk to crumbs, both sides, into Skillet, one minute, peek under the cat and see if it's golden brown, flip, count to 50, pull from skillet and plate it with what your going to ask as the next question, Enjoy
