All of the United States carriers (and other affluent airliners of the world) have doppler-radar abilities within the cockpit to avoid dangerous turbulence situations (or situations which can shake the plane). Our American Airlines pilot on a recent flight from Chicago to Seattle stated that "we are going to fly around the storm; going north into Canada then back down the Puget Sound coordidor." He also pointed out that "in the olden days, we would have just flow through the storm, and you would have felt the heavy turbulence."
In regards to planes, all Boeing made planes that are well-maintained hold up well during heavy turbulence.

I know it's definitely not the A320 family (318-321). I've been on many of those, and there's always turbulence. One time, it was so turbulent that the FA's couldn't do the beverage service!
I'm thinking that the best one would be the Boeing 757-200. However, airplanes with winglets (e.g. 737NG, some 757's, 767-400, etc.) probably have it even less.

Qatar Airways. I have travelled with different airlines, but the best is QA, I actually look forward to my journeys with them.
And yes, the flights to Nigeria are not able to handle the turbulence too well, or maybe the skies in Africa are just too turbulent.

The 777, the L-1011, and the DC-10 seemed to handle the turbulence best to me.

For me it's KLM although I can't say I've been on too many airlines (Air France, Aer Lingus, Continental, British Midland and Aeroflot as well as KLM). I've flown with them a few times to S. America and enjoyed my flights every time.
