Same as the two above, except use Mexican velveeta and substitute hot Italian sausage for the ground beef/chuck.

If that's not spicy enough, throw in a handful of diced jalapenos.

PAT'S HOT AND SPICY CHEESE DIP

3 lb. box Velveeta cheese
2 cans diced Ro-Tel
1 lb. ground chuck
1 pkg. McCormick Taco Seasoning

Brown ground chuck. Place ground chuck in colander and rinse with hot water and set aside.
Cut cheese up into cubes. Place cheese, ground chuck and 2 cans of Ro-Tel in crock pot (high temperature). Cook in crock pot until cheese is thoroughly melted. Serve over chips of choice.
