Carribean Holiday Shrimp
1 tablespoon vegetable oil
2 tablespoons minced fresh ginger root
2 limes, juiced
2 cloves garlic, minced
1 tablespoon soy sauce
1/2 teaspoon white sugar
1/2 teaspoon crushed red pepper flakes
2 pounds large cooked shrimp, peeled, tails on
1/2 cup chopped fresh cilantro
DIRECTIONS
In a large bowl combine oil, ginger, lime juice, garlic, soy sauce, sugar and red pepper; mix well. Stir in shrimp and cilantro. Cover and refrigerate 1 to 4 hours before serving. Stir occasionally while chilling.

Bitters Caribbean Stuffing
¼ cup butter
¼ cup diced celery
½ cup diced red onions
2 tsp. minced garlic
½ each diced red and yellow peppers
5 cups (day old) bread, cut into ½ inch cubes and toasted
¼ tsp. fine ground thyme
¼ cup sliced olives
¼ cup raisins
Pinch cayenne pepper [optional]
Pinch cinnamon powder
1 tsp. Angostura® aromatic bitters
½ -1cup hot chicken stock
Salt and Pepper to taste
Melt the butter and sauté the celery, onions and garlic. Add the peppers and stir well for another two mins. Remove from the fire. In a large bowl combine all the dry ingredients and mix well. Next, slowly add the bitters and next the stock [depending on how firm you want the stuffing to be].
This mixture can be used in many different ways: for example to stuff turkey, chicken or fish or as a garnish or side dish.

HONEY PINEAPPLE HAMl
get 4 or 5 lbs of fresh ham
brush honey on the ham
sprinkle some adobo which is garlic, pepper, onion and any other
condiment that you like
shallow cuts to form diamonds and place cloves on each tip.
place pineapples on ham and a little more honey.
cook it in the syrup of the pineapple with a little brown sugar
place in the oven for about 4/5 hours if not precooked, if
precooked just enough time to heat and light browning.

CARIBBEAN COCONUT PIE
1 (9") unbaked pastry shell
1 1/4 c. flaked sweetened coconut
3 tbsp. butter
1/2 c. sugar
3 eggs
1 c. dark corn syrup
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. vanilla
2 tbsp. rum
Dash salt
Toasted coconut
Sprinkle coconut in pie shell. Cream butter in small mixer bowl; gradually beat in sugar. Add eggs and beat well. Blend in remaining ingredients. Pour egg mixture over coconut in pie shell. Bake at 350 degrees for 50 minutes or until slightly puffed on top. Cool to room temperature. Garnish with toasted coconut, if desired.

I was on a Royal Caribbean ship last year, from Nov 30th to Dec. 11th. There were minimal decorations, hardly noticeable. They did have a lovely gingerbread house in the Windjammer Room (buffet).
