happens all the time, either runny or heavy...I use a lil bit more corn meal than the recipe calls for and I sift it first. Make sure your grease is good and hot (with a sprinkle of water or batter) so they spend little time in the grease cooking.

Becuse your oil needs to be very hot before you drop them in.Otherwise they don't crisp up right away and they start soaking up all the oil instead.

Your oil is not hot enough--It should 375 degrees. They will float and be golden brown when they are done. Hope this helps.
