I have a cookie recipe that calls for almond butter and I have never heard of it and can not find it at the grocery store. Any thoughts or suggestions?

Almond butter is like peanut butter, but made with almonds. It is available in health food stores mainly. Depending on the recipe, you could substitute either peanut butter or tahini (sesame seed butter). Of course, peanut butter will make the recipe taste like peanuts. If this does not bother you, you can use peanut butter, as the physical properties of any nut butter will be the same. Of the two choices (peanut or sesame butter), sesame would be the most like almond butter in flavor.

If you have a blender, you can make your own almond butter by toasting 1 cup of almonds at 350 degrees for 8-10 minutes, or until lightly toasted. Let cool, then blend in a blender until pureed. This will make about 2/3 cup.

Almond paste (marzipan) cannot be substituted for almond butter. It has egg whites and sugar added to it.

Storytime: Some years ago, I worked as a chef and caterer, and had some French clients. There was some silly almond tart (tarte aux amandes) that a lady liked that was a pie crust filled with almond butter, sugar, and eggs, and baked. When it came out of the oven, I spread apricot jam on it.

I noted to a friend one day that this was basically a PB&J pie, and decided to reinvent the tart using peanut butter, sugar and eggs in the base, and grape jelly on top. It was a success, even with the French people (who usually disdain peanut butter). I used to sell those pies for $30 each.

You can get almond and even cashew butter at any supermarket with a decent health food department or a specifically health food store. It is sold as an alternative to peanut butter, so look for a container similar to that. Its darn tasty stuff. You may never buy peanut butter again.

It is just like peanut butter only made from almonds. I am not sure what part of the country you live in but you should be able to get it at any major grocery store. If not you could go to a gourmet shop or just substitute good ole Peanut butter instead.

Use two cups of blanched whole almonds. If only unblanched almonds are available, blanch them this way: Place the almonds in a saucepan and cover with water. Bring to boiling, then drain. The skins should slip off easily when you press each almond between your thumb and forefinger. Dry on paper towels. Spread the dry almonds in a shallow baking pan and toast in a 300 degree oven for about 20 minutes or until golden. Cool for 5 minutes before processing or blending.
To process: Place the steel blade in your food processor or blender. Add the nuts. Cover and process or blend until a butter forms, stopping occasionally to scrape the sides of the bowl or blender a few times. Keep processing for three to five minutes or until all of the mixture is evenly blended. Process about two minutes more or until the butter is the desired smoothness.Store in a covered container in your refrigerator for up to two weeks. Bring to room temperature for easier spreading. Makes about 1 1/4 cups.

The grocery store should have it with the other nut butters (like peanut butter). It's the same thing, just made with almonds rather than peanuts. If you cannot find it at the supermarket, I would check a local health foods store.

The brand in my fridge is "Nuts to You Nut Butter Inc."

I don't remember where I got it, but it was probably in a health food store or the organic/vegetarian/health section of a large grocery store.

It's usually quite readily available in major urban centers.

I've found a few websites that might help you if you want to order online.

If you've got the time, you can always ask the manager of your grocery store to stock a favorite product.
