Old Fashioned Sugar Cookies
1 cup butter, unsalted
1 cup white sugar
2 eggs, lightly beaten
1 teaspoon vanilla
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
In a bowl, cream the butter and sugar. Beat in the eggs and vanilla.
In a second bowl, combine and mix well the flour, baking powder, and salt. Stir flour into butter mixture 1 cup at a time. Chill dough for 3 to 4 hours.
Roll out dough and cut into shapes with cookie cutters or a knife. Brush with milk and sprinkle with colored sugar. Bake on a sheet pan or a parchment lined sheet pan in a preheated 350 degree F oven for 10 to 15 minutes depending on the size of the cookie. Remove cookies to a rack to cool completely.

No-Chill Cutout Sugar Cookies
1 cup butter, softened
1 cup granulated sugar
1 large egg
1 tsp. vanilla extract
1 ½ tsp. baking soda
3 cups all-purpose flour
Preheat oven to 375 degrees. In a large bowl, cream butter and sugar with an electric mixer. Beat in eggs and vanilla. Add baking powder and flour one cup at a time, mixing after each addition. Dough will be stiff. Do not chill dough. Divide dough in half. Roll each half about 1/8 inch thick between two sheets of wax paper. Dip cutters into flour before each use. Bake cookies on ungreased cookie sheet on middle rack of oven for 8 – 12 minutes or until lightly browned.
Icing
½ cup confectioners’ sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/8 teaspoon vanilla extract
2 – 3 drops food coloring
In a small bowl, stir together the confectioners’ sugar and milk until smooth. Add the corn syrup and vanilla extract; mix well. Divide into separate bowls and add food colorings to desired intensity. After cookies are baked, dip into icing or paint them with a brush.

These are like "Mothers" sugar cookies. Very soft.
1 c margarine(don't use butter)
1c sugar
1 egg
2 Tbls milk
3 c flour1 1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
Cream together margarine and sugar. Beat in egg,milk and vanilla. Add dry ingredients. Put in fridge for about 2 hours if you want to but you dont have to. Do Not roll out thin. Bake at 400 degree for about 5-8 minutes. Let cool and frost.
I usually skip the fridge and just roll out a ball of dough and flatten it in my hand. I don't do the cut outs very often. I like to roll the balls in cinnamon sugar then flatten and bake.

Alton Brown (Good Eats) has a good recipe for sugar cookies. It couldn't be simpler. The only drawback is you're supposed to leave the dough in the fridge for 2 hours before you cut and bake it. It makes the flour suck up more of the butter.
This recipe is more hard/crumbly and buttery. They're not very soft. Just telling you in advance. They're good enough for me.

Brown Sugar Cookies:
When real butter and dark brown sugar blend and bake, you get these crisp praline-tasting cookies.
1 cup butter, softened
1 1/2 cups firmly packed dark brown sugar
1 large egg
1 teaspoon vanilla extract
3 1/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Decorator sugar
Beat butter at medium speed of an electric mixer until creamy. Gradually add brown sugar, beating well. Add egg and vanilla, beating well.
Combine flour, soda, and salt; add to butter mixture, beating just until blended.
Roll dough to 1/4" thickness between two sheets of wax paper. Cut with 4" cookie cutters. Place 1" apart on ungreased cookie sheets. Sprinkle cookies with decorator sugar.
Bake at 350° for 10 to 12 minutes. Let cookies cool 1 minute on cookie sheets, and carefully transfer to wire racks to cool completely.
Yield: about 2 1/2 dozen
