My mother makes what she calls a boiled icing, it is a sugar syrup whipped into egg whites, with this I would melt 1 teaspoon of unflavored gelatin with a tablespoon of hot water, stir it into the syrup, and as your beating the egg whites add the syrup and gelatin mixture.

Boil 1 1/2 cups of water with 3/4 cups sugar, and bring it to a boil, cook on a boil for 3-4 minutes, let it cool for 2 minutes, add the gelatin, then as you beating the egg whites, let them get to soft peaks before adding the sugar syrup.

Add it slowly and make sure you have in all in and whip it for 1 minute after syrup has been added, when icing your cake have a pitcher of water to smooth the icing out and then you can fluff it to look like a cloud.

Add the cocoa to the syrup after it has boiled, before and you risk a boil over, make sure you use a fork or a small wire whisk.
