Wishing peace, happiness, health, and so on is appropriate for any holiday and Hanukkah is no exception. May all your dreams come true this holiday season!

You could:
wish them light in their lives
enjoy having them/family around
so glad you can (still) celebrate with them
tell a good memory of them & Hanukkah
Hope that they only spin Gimel's :)

generic:
can't wait to see you again
sending all your love
so glad that you know them

lookup also, Jewish jokes online/Hanukkah jokes/etc.!
