Red wines get their color and flavor from their skins. So grapes that make good wine have small berries giving a high skin to juice ratio.

The best red wine grapes have small amount of juice which is why watering vines is forbidden in most of France by the appellation laws. . If you have a large amount of juice, either because you are using large grapes or because they have had excess water then you will get thin pale watery wine without much flavor.

You can increase juice grape on any variety by watering. If you really want a lot of juice, avoid the famous named varieties (They're famous because they have high skin/juice ratio) and look for the varieties used in cheap bulk wines.

howdy, in my experience, i've found that syrah grapes as well as sangiovese grapes produce the most juice. it doesn't hurt if they're nice and ripe.
