Banana Coffee Cake with Macadamia Nuts and Coconut:
Substitute pecans if you don't have macadamia nuts.
Cooking spray
1 1/3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 cup mashed ripe banana (about 2 large bananas)
3/4 cup granulated sugar
3 tablespoons vegetable oil
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 large egg
1/4 cup packed dark brown sugar
1 tablespoon water
2 teaspoons butter
2 tablespoons chopped macadamia nuts, toasted
2 tablespoons flaked sweetened coconut
Preheat oven to 350°.
Coat a 9-inch round cake pan with cooking spray; line bottom of pan with wax paper. Coat wax paper with cooking spray.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, salt, baking powder, and baking soda in a bowl, stirring with a whisk. Combine banana and next 5 ingredients (banana through egg) in a bowl; beat with a mixer at medium speed for 1 minute or until well blended. Add flour mixture to banana mixture, and beat until blended. Pour batter into prepared pan.
Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan. Carefully peel off wax paper.
Combine brown sugar, water, and butter in a small saucepan; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat; stir in nuts and coconut. Spread over cake. Serve cake warm.
Yield: 12 servings (serving size: 1 wedge)

Iced Coffee Mousse
1 teaspoon unflavored gelatin
1/4 cup water
1 cup sweetened condensed milk (not evaporated)
3 teaspoons instant espresso powder
1 teaspoon vanilla
1 cup well-chilled heavy cream
In a small saucepan, sprinkle the gelatin over the water and let it soften for 2 minutes.
Add the milk and the espresso powder to the gelatin, and heat the mixture over moderate heat, whisking constantly, until the powder is dissolved. Remove the pan from the heat, stir in the vanilla, and set the pan in a bowl of ice and cold water, stirring the mixture every few minutes until it is thick and cold.
In a small bowl, beat the cream until it just holds stiff peaks and fold the coffee mixture into it gently but thoroughly. Spoon the mousse into 4 chilled long-stemmed glasses and chill it until ready to serve.
Vietnamese-Style Iced Coffee
2 to 3 teaspoons sweetened condensed milk
2 to 3 teaspoons medium-fine ground French roast coffee
Boiling water, as needed
Ice cubes, as needed
Equipment: Single-cup Vietnamese-style coffee filter
Put the condensed milk into a coffee cup. Place the filter on top of the cup. Unscrew the filter, add the coffee grounds, and screw the filter back on. Pour in enough boiling water to fill the filter. Close the lid and let the coffee slowly drip into the cup. Remove the filter and stir the coffee and milk together. Pour the coffee mixture into a glass of ice and stir to chill. Serve.

Crock pot Coffee Roast
1 Pot Roast
3 cups strong coffee
10 cloves garlic
1/2 cup dried parsley
2 tablespoons mustard
1 tablespoon Steak sauce
1 teaspoon each Kosher Salt a cracked pepper
Place roast in crock pot add ingredients in order. Cover and simmer 5-8 hours for the richest roast you will ever try.(jmo) I got this recipe from my mother in law and my whole family loves it! serve with bread, massed potatoes and a salad. Enjoy!

Grog (hot) 6 servings
3 cups coffee
1/2 cup heavy cream
1 cup brown sugar
2 tablespoons softened butter
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
Peel of one large orange, broken into 6 pieces
Peel of one large lemon, broken into 6 pieces
Place one piece of each peel into cups
Mix butter, sugar, cloves, nutmeg and cinnamon
Mix coffee and cream
Pour both mixtures into cups and stir.
Irish (hot) 2 servings
2 cups strong coffee
2 tablespoons orange juice
2 teaspoons lemon juice
whipped cream
Mix coffee, orange juice and lemon juice
Pour into Irish whiskey glass
Top with whipped cream
