Ok, if I put some dark ale in a big pot and start to boil it, not a lot just a little like a few cups and then add the cubed beef and stir it. Is that all I need or would I need to add anything else to the dark ale to cook it? After that I'm going to heat up some mole sauce and drizzle it over the meat with some of the ale.

To answer your question, braising is the correct spelling.

The key to craising is slow, consistent heat that allows the majority of the meat to stay wet with, for you, ale. I would recomend that you season the meat lightly with salt. It shouldn't taste salty but it will bring out the flavors of the meat to complement the ale.

Your recipe sounds good to me, though I have never tried it. I've found the most basic recipes work the best. You should really watch the ale though because it may reduce down too far and sour the taste. Keep tastingthe sauce to ensure it will be good in the end

I have used beer to cook chili and I start by searing the meat with a little oil and onion then once it is all browned add the beer (no more than 2 cups or meat will be more poached than seared)and reduce heat to simmer until liquid is reduced to half (using dark beer it will become syrupy) Then add the Mole and continue your recipe. first get the pan realy hot and spice/herb your meat then put it in the pan to baise it then put in the beer and or vegies to cook it in your oven
