Whichever one fits better in the oven with the roast on it. If it's a big roast then I use the bottom rack but I usually just stick to the middle rack. That way you get even heat from top to bottom.

It depends on what your cooking junior Chef
Top rack is for broiling items like open garlic bread or melting cheese on a tuna melt or to just brown up whatever it is you have cooked.
Middle rack for pizzas, pies, casseroles, pastry cooking, seed and nut browning, small roasts because of space.
Lower rack for large roasts, turkeys, frozen lasagnas. Hope that help junior Chef

it all depends on how long you plan on cooking. if you are in a hurry, you should put it closer to the bottom. if you have all day, put it closer to the top. most peope tend to put it near the center, though.
