4 large marshmallows = 1 ounce; 1/2 cup mini marshmallows = 1 ounce.

My answer may not help, but what are you making? If you are making something where you don't want pieces of marshmallow in the final product, like a smooth frosting , you should get a jar of fluff. If you're making fudge, most of the marshmallows will melt, but not all (I've substituted marshmallows for fluff in fudge with no problem).

You can't really just melt the marshmallows and make creme due to how marshmallows and creme are made.

There are lots of recipes on how to make your own creme, but considering the time and effort, it may be cheaper to run to 7-11 and buy a jar :)
