How to Make Granola

Summer time is granola time. It's great for camping. Mix it with some M&M's and make great trail food for that energetic Boy Scout. We like it as cereal with either hot or cold milk. And homemade granola is so much fresher—and we think better—than what you buy in the stores.
Let your imagination run wild when you make granola. The basic ingredients are cereal, oil, and a sweetener. Then add anything that you like to give it the character, taste, and nutrition that you want. Remember that kids' tastes are different than yours so make two batches—granola is easy to make.
Note: The pictured granola was made with rolled oats, rolled wheat, sunflower seeds, brown sugar, vanilla and orange extracts, walnuts, and dried apples.
Mix and Match Granola
2 cups rolled oats, wheat, or barley
2 cups rolled oats, wheat, or barley
1/2 cup sunflower or sesame seeds
1/2 cup honey, maple syrup, or a thick syrup made with 1/2 cup brown sugar and 2-3 tablespoons water
1/4 cup canola oil
1 teaspoon vanilla and/or other extract
3/4 cup raisins or other dried fruit (optional)
1/2 cup nuts (optional)
1/2 teaspoon salt
Directions:
1. In a large bowl, mix all the dry ingredients together except for the dried fruit. Set the dried fruit aside.
2. In another bowl mix the sweetener, oil and extract together.
3. Add the liquid to the dry ingredients and mix thoroughly. The liquids will be absorbed and the granola will become darker and shinier.
4. Spread the granola in a shallow baking pan. Bake at 325 degrees for 35 to 40 minutes or until fairly dry and starting to brown. Stir every ten minutes while it is baking to keep the granola on the bottom from burning.
5. Remove the granola from the oven and stir in the fruit.
Tips
1. Granola will become crispier and crunchier as it cools.
2. Because of the oil, granola will not stay fresh long. Store in an airtight container and use within two weeks.

Yield: 48 Servings
Ingredients:

2 ts Baking powder

Gradually beat in flour mixture. Stir in Nestle Toll House semi-sweet chocolate mini morsels granola and raisins. Drop by rounded measuring tablespoonfuls ont ungreased cookie sheets. Bake 9-11 minutes until edges are golden brown. Let stand on cookie sheets 5 minutes. Remove from cookie sheets; cool. Makes about 4 dozen cookies.
Granola-Chocolate Cookies
" This is a sweet crunchy cookie with chocolate chips and granola. Easy to make and quick to satisfy."
INGREDIENTS
1 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cups granola
1 cup semi-sweet chocolate chips
1/2 cup chopped, unsalted dry-roasted peanuts
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the butter, brown sugar and white sugar. Beat in the egg and vanilla. Combine the flour, salt and baking soda, stir into the creamed mixture. Finally, stir in the granola, chocolate chips and peanuts. Drop dough by heaping teaspoonfuls onto greased cookie sheets, about 2 inches apart.
Bake 12 to 15 minutes in the preheated oven, until cookies are lightly browned around edges. Remove cookies to wire racks and allow to cool.
Granola-Date Cookies
" A healthy granola cookie with dates and peanuts. These make wonderful after school snacks."
INGREDIENTS

heres one that i have found...
INGREDIENTS:
2 1/4 cups all-purpose flour
1 cup sugar
1/2 cup butter
1/4 cup orange juice
2 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup granola cereal
1/2 cup raisins
1/2 cup quick cooking rolled oats
PREPARATION:
Into a large mixing bowl, measure flour, sugar, butter, orange juice, baking powder, cinnamon, baking soda, salt, and egg. With electric mixer at low speed, beat ingredients until well blended, scraping bowl occasionally.
Stir in granola, raisins, and oats.
Drop dough onto greased cookie sheet with teaspoon, about 2 inches apart. Smooth mounds slightly with fingers. Bake at 350° for 15 to 20 minutes, until lightly browned. Remove to rack with spatula and let cool completely. Store in tightly covered container for up to 1 week.
Makes about 3 dozen granola cookies.
