I'm looking for a simple cookie recipe besides the traditional shortbread and gingersnap cookies to make with the kids for Christmas. Does anyone have any ideas?

POTATO CHIP COOKIES

1 lb. butter
1 1/4 c. sugar
3 1/2 c. flour
2 tsp. vanilla
1 1/2 c. crushed (not fine) potato chips
Powdered sugar as needed

Combine all ingredients. Drop by teaspoon on ungreased cookie sheet. Sprinkle with powdered sugar. Bake at 350 degrees for 12-16 minutes.

Chocolate Peppermint Cookies


cookies:
2cups unsifted flour
3/4 cups unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light brown sugar
3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
2 cups chocolate chips (try mint for an extra tasty twist)

glaze:
3/4 cup confectioners' sugar
2 drops mint extract, more or less
3 &1/2 teaspoons water

For the cookies:
Preheat oven to 350 degrees F.
In a medium bowl sift together flour, cocoa powder, baking soda, and salt. Set aside. In a mixer beat together the butter w/ the sugars until fluffy (about 2 minutes). Add eggs and vanilla and beat until smooth. A little at a time, beat in flour mixture. Gently mix in chocolate chips (w/ a spoon).
On an ungreased cookie sheet, drop tespoons of batter about 2 inches apart. Bake until slightly cracked on top, about 8-10 minutes depending on your elevation.

For the glaze:
in a small bowl mix together sugar, mint extract, and water until smooth. Transfer to pastry bag (you can make your own w/ a ziplock baggie). Drizzle glaze over (cooled) cookies. Let cookies stand about 10 minutes.

This is so simple that anyone could do it..I burn every cookie that I make but this..Take already to bake cookie dough that is all ready in squares....put then in the little muffin pan( the small one). Make a cup out of them. Then bake for 10 minutes and when you take them out put chocolate chips or I have been using the swirl chips.. Push them down a little. Let cool and you have a 2 bite size cookie. The kids love making them since they are already to put in the pan and they can add the chips. Perfect!

These are fun and easy

Pecan crescents
1 cup butter
2 cups flour
2 cups chopped pecans
5 Tablespoons sugar
2 tsp vanilla
1/2 tsp salt

Powdered sugar

cream butter and sugar together add vanilla. mix in flour and pecans. roll into little logs about 2 inches long and curve into a crescent. bake on ungreased cookie sheet for 20 minutes at 325 degrees. When cookies come out of oven, cool slightly and roll in powdered suger makes 2-3 dozen

heres a recipe for Applebee's Walnut Blondies

Dough

1 C. sifted flour

1/2 tsp. baking powder

1/8 tsp. baking soda

1/8 tsp. salt

1/2 C. chopped walnuts

1/3 C. butter or margarine

1 C. packed brown sugar

1 egg, beaten

1 T. vanilla extract

1/2 C. white chocolate chips



Directions:

Preheat oven to 350ºF.

Sift flour, add baking powder, baking soda and salt. Sift again. Add chopped nuts. Mix well and set aside.

Melt butter. Add brown sugar and mix well. Add egg and vanilla extract. Blend well. Add flour mixture, a little at a time, mixing well. Stir in white chocolate chips. Spread in a 9-inch square pan. Bake for 20 to 25 minutes or until a wooden pick inserted in center comes out clean or with slightly fudgy-looking crumbs. Serve with ice cream and Maple Butter Sauce.



Maple Butter Sauce

3/4 C. maple syrup

1/2 C. butter

3/4 C. brown sugar

1/2 C. walnuts, chopped (optional)



Directions:

Combine syrup and butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Add walnuts, if desired.

Cherry Coconut Bars

1cup flour
1/2 cup butter or margarine
3 tbsp. confectioner's sugar
2 eggs slightly beaten
1 cup granulated sugar

1/4 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
3/4 cup chopped nuts
1/2 cup coconut
1/2 cup quartered marchino cherries


Heat oven to 350 degrees. With hands mix 1 cup cup flour, butter, and confectioners' sugar until smooth. Spread thin with fingers in ungreased square pan, 8x8x2". Bake about 25 min. (or until browned).

Stir rest of ingredients into eggs. Spread over top of baked pastry (no need to cool). Bake about 25 min. Cool. Cut into bars.

1-3/4 cups (10-oz. pkg.) HERSHEY'S MINI KISSES Brand Milk Chocolates
Directions:
1. Heat oven to 350°F. Lightly grease cookie sheet.

2. Beat butter and peanut butter in large bowl on medium speed of electric mixer until creamy. Gradually add granulated sugar and brown sugar, beating until well mixed. Add egg and vanilla; beat until light and fluffy. Stir together flour, baking soda and salt; add to butter mixture, beating until well blended. Stir in chocolate pieces. Drop batter by rounded tablespoons onto prepared cookie sheet.

1/3 c. water
3 c. flour
1/2 lb. cherries, chopped

1 lb. pecans, whole
3 tsp. cinnamon

In a separate bowl, dissolve the soda in the water. Cream butter and sugar together. Add eggs, vanilla, soda. Combine flour, salt and spices. Add these dry ingredients to butter
and sugar mixture. Add dates and candied fruit and nuts. Drop by teaspoon onto a greased cookie sheet. Bake at 300 degrees
for approximately 20 minutes.
