I use them in Remoulade sauce, as a sandwich filling extra, on skewers with cheese and pickled onions, ground up with the leftover ham from Xmas and made into ham salad, add some mayo, mustard and chopped onions.
We used them when I was a chef with smoked salmon, on the side with french pate, I used to make an onion confit also to add a sweet and sour edge.

You eat them like some people eat dill pickles. Pick it up and take a bite. With sandwichs of most kinds. We used them with black and green olives, dill and bread and butter pickles. And gerkins. Holidays were the only time of the year we got them. To expensive my mom would say.

Take a slice of deli roast beef, smear on a good layer of cream cheese (I like the roasted garlic kind), put a gherkin down, and roll it up, then cut it in pinwheel-like slices.
Really great appetizer!
