Night vision goggles pick up infrared light. Even though it may seem dark to you, there is really light, just light that's invisible to you. Night vision goggles also usually provide an IR light source so you'd probably see a bright green light and yourself. Heat also emits IR energy so just your warm body will provide some "light".

Depends on whether you're using passive or active goggles. If you're using passive you would still see some kind of relfection because they just amplify the very small amount of light that is still present. If you're using active goggles you would see a bright, blank surface. This is because active night vision goggles send out infrared light and produce an image from the light reflected back. The mirror would reflect all the infrared so you would just see a bright, green, rectangle (or whatever shape the mirror was).

night vision goggles magnify ambient light, so if there were any light to be had, you would see a shadowy reflection, but it you were in a completely sealed non-light environment you wouldn't see a thing 'cause the goggles wouldn't work

You will see exactly. The mirror will function as mirror, the quality of mirror is to reflect the rays falling on it. Instead of the visible-band, the infra red rays will function.
