would like to know what spices to use also.

I used to make ny own rubs for prime rib until I stumbled upon the McCormick Garlic & Herb seasoning. Since then that's all I use.
Before you roast, meat needs to be at room temp.
Preheat oven to 450 F and place prime rib (fat side up) in a large, deep baking pan.
Rub beef.
Place roast in oven and immediately reduce heat to 350F. Roast approximately 12 minutes per pound for medium-rare, or about 2 hours for a 10-lb roast. Remove the pan from the oven, remove the roast from the pan and let stand for 25 minutes before carving. To serve, strain the gravy into a sauce boat and carve the roast at the table, counting on about 2 people per rib.

this is the way I have cooked prime rib...
salt and pepper the fatty side of the meat....preheat your oven to 500 degrees.....let it get hot....place the meat in a pan and leave it in the very hot oven for 45 minutes...(at least a 4 or 5 rib piece)...turn your oven down to 200 degrees and leave to cook until desired doneness. You must have a meat thermometer.
I use the high heat to kill any bacteria that is present on the meat.
The Thermometer will tell you the correct doneness.
It takes a whole day to cook this size of meat.
but it is utterly deliscious.

What ever you do. DO NOT CUT INTO THE MEAT prior to cooking. BOBBY FLAY has some great receipes on the food network. Look up www.foodnetwork.com and then type in prime rib and you will find a nice assortment. You will find that salt is used rather heavily on the exterior and the cooking time is long and the tempature is rather low.

Make small slits in meat, and insert pieces of garlic. Cover with fresh ground pepper, and place in a 425° oven for 20 minutes. Reduce heat to 350°, and roast until medium rare. Let sit 10-15 munutes before carving. Serve with Yorkshire pudding and gravy.
