In an oven!!

No, seriously, I like to use a glass baking dish. I season the chops, place in dish, add a bit of water and a splah of olive oil (or any oil). I also add a can of cream of mushroom soup on top (straight from the can). Bake at 350 for about 45 minutes!

Here's a delicious recipe for your 2 in. pork chops:

Make a mixture of half crushed saltine crackers and half flour (enought to coat all your pork chops). Set aside.
Season the pork chops anyway you like, but remember that the breading mix is loaded with salt from the crackers.
Beat one egg in a small bowl.
Place a small amount of flour in a cereal size bowl

Pre-heat oven to 350 deg.

Dip the seasoned pork chops in the flour, then in the egg wash, then in the breading mix.
Place in a frying pan wth hot oil and only just brown on both sides, but DO NOT cook through.
Place the browned chops in an oven pan and bake until they test done.
If you don't overcook them they will be juicy and delicious.

Bake ? I'd rather pan-sere quickly and THEN finish in a 350 oven.

I get 2" chops from my butcher, marinate in red wine, tabasco, garlic, thyme and black pepper overnight... then quickely sere both sides in a hot cast iron skillet with alittle olive oil. I pop them into the oven for 10-15 minutes to finish. (serve with garlic noodles and a balsamic-dressing salad)

I also like to simple salt, pepper and then sere in some butter... then move to a pyrex-dish on top of a layer of ring-sliced Granny Smith apples lightly dusted with sugar... I deglaze the skillet with some white wine, then add stock, 4tbsp dijon mustard and a cup of heavy cream. Wisk all this together then pour over the chops and apples... and bake for 15-20 in a 350 degree oven. (serve with creamy noodles and green salad).

I'm NOT a fan of "breaded" chops... that is for THIN pieces of meat like pounded cutlets.

I also do the same with chops that I slice for a pocket and stuff with a traditional bread-stuffing.

Good luck and Enjoy.
