I've tried 3 batches and I'm following the recipe but my spritz and sugar cookies keep coming out bitter

It's not like I haven't baked before so I just can't figure out what I'm doing wrong

Any ideas? Could it be how I am creaming the butter? (I only have a hand mixer)

I have never heard of bitter cookies, are you using the correct amount of sugar? Try tasting the cookie dough before you bake it to see if it is bitter before the baking process. You may also want to look for different sugar and spritz cookie recipes and try it again.

WHOA girl,check the expiration dates on alllll the ingredients you have! That's probably the culprit. Yes, you have to really blend in the butter or it wont be even consistency to bake into the cookies, ie butter will be missing in certian parts of the cookie, like it has no butter at all. make sense? Seriously check the exp dates...

It could possibly be the flour you're using.

Self rising flour is generally sweeter because you don't have to worry about measuring out the soda and baking powder if the recipe calls for it.

You might try buying new soda. I think sometimes it takes on a flavor of its own that is added into the food.

Have you tried adding more sugar or adding sweetners.
