More information please: Is it a flintlock? Percussion Cap? or in-line? What Cal. is it?
But as a general rule if thumb you want to use the same amount of charge that your bullet weighs. So if you have a 200 grain bullet you want to use a 200 grain charge. That is a general rule of thumb.
Also if it is a flintlock or percussion cap you have to use the courser charge (powder) made for them. It will say it on the jar that it is for flintlocks and percussion caps.
The finer charge (powder) is for pistols you never use it in rifles.

AND NEVER USE MODERN SMOKELESS POWDER IN IT!

I'm currently shooting an in-line 50 cal. with 209 percussion cap. Was shooting old Hawking's type percussion cap (caplock)

In my 50 cal. I generally us a lighter load. Normally I shot a 250 grain bullet but use only 130 grain charge. I do this because all my hunting is in heavy brush so no long range shots. You're going to at max get a 50 yard shot if you are really really lucky. Most shots are well in bow range of 25 to 30 yards.

But for longer range shots you might want to think about going with a sabot bullet which has a 45 cal. projectile. Less drop and higher velocity.
BUT THE IMPORTANT THING IS TO READ YOUR OWNERS MANUAL AND DO NOT OVER CHARGE YOUR LOAD!

AND ALWAYS FOLLOW STRICT FIRE CONTROL DISCPLINE!

It depends on what you intend to hunt.

I use 2 50 grain Triple 7 pellets and the 250 grain Hornady lock and load in my Encore for deer hunting.
I use 3 50 grain Triple 7 pellets and a 340 grain Precision Rifle Dead Center bullet for Elk.
But thats what works for me.

The only way to know for sure is to put some time in on the shooting bench with several different bullets and powder choices.
And consider what you are hunting and how far you may be shooting. For me I won't shoot past 200 yards for deer so there is no need to abuse myself with 150 grains of powder. And I have put in a lot of time practicing so I feel comfortable shooting that far.

In short practice a lot and try several different combinations.
