I am using stencils of Chinese symbols to design a gift, but I wasn't sure what colors I should and should not use. I am definitely using red and gold, but I wasn't sure if I could use white. I vaguely remember hearing that white should never be used in Chinese art, but I could have misinterpreted it.

In many chinese designs they use a lot of reds, black, green, yellow and white!!

Yes, white really shouldn't be used; in China, white is the color of mourning.

i would use black instead of white
