ORANGE CHIPOTLE MARINADE

2 tsp grated orange zest
1 cup fresh orange juice
3 tbl fresh lemon juice
1 tsp minced garlic
1/3 cup vegetable oil
1/4 cup soy sauce
1 tbl chopped canned chipotle chile in adobo,
or 1 teaspoon red pepper flakes
1/2 tsp salt
1 tsp freshly ground black pepper
Combine all the ingredients in a small bowl. Marinate and grill chicken, steaks, or pork loin.
Makes 2 to 2 1/2 cups marinade.

Can you get canned chipotle peppers (in adobo sauce) from your local grocer or mexican grocer? If so, this makes a great base. Put in food processor or blender with some orange juice concentrate, some water to thin it out, garlic, black pepper, and alot of fresh cilantro. This makes an excellent marinade or finishing sauce. Sorry, I don't measure anything, so you'll have to use common sense for measurements. :) By the way, if you cant find whole canned chipotles, Tabasco Chipotle Sauce is ok, just not as intense of chipotle flavoring. I picked some up from the major auction site. Good Luck. Enjoy.

Chipotle's Chicken Marinade
1 (2 ounce) package dried ancho chiles
1 teaspoon black pepper
2 teaspoons cumin powder
2 tablespoons fresh oregano, chopped
6 cloves garlic
1/2 red onion, quartered
1/4 cup vegetable oil
4 chicken breasts (6 ounces each)

Soak dry chilies overnight in water, until soft. Remove seeds. Add allingredients except meat in food processor. Puree until smooth. Spread mixture over chicken, or other meats and refrigerate at leastone hour, up to 24 hours. After marinating, heat grill to about 400 degrees F, or if cookinginside, heat small amount of oil in skillet or grill pan over highheat. Salt meat to taste (optional), and grill lightly, turning onlyonce, until done. 4 minutes per side of chicken. Recipe will make four burritos.

Remove seeds. Add all ingredients except chicken in food processor. Puree until smooth. Spread mixture over chicken breasts and refrigerate at least one hour, up to 24 hours.

Heat grill to about 400 degrees F, or if cooking inside, heat small amount of oil inskillet or grill pan over high heat.

Salt chicken breasts to taste. Grill chicken breasts about4 minutes per side, depending upon thickness, until done.

Serve with rice, black beans, or choice of side dish. Garnish with fresh cilantro.
