It's best NOT to munch at night. Try drinking a big glass of water and if you are still HUNGRY eat some fruit. A lot of people seem to recognize thrist as hunger, so always drink water before you snack - a lot of times you no longer want anything.

If i am in the mood for something sweet, I let myself have 1 cup of low fat vanilla icecream or sorbet. That's if I have done really good all day. If not, I'll eat an apple or another piece of fruit. If I want something salty, I'll make a bag of light popcorn. I'll pour some into a small bowl and eat it with an apple.

Why you need to munch at night anyway? Carrots and all kind of veggies won't make you fat.
