With Splenda you can just substitute the Splenda for the amount of sugar the recipe calls for. (according to thier web site)
I've never had a problem just doing that.

try this recipe;
4 cup Splenda
1 can Evaporated milk
1/4 lb Butter, (or margarine)
1 tsp Vanilla
1 pkt (12 oz.) chocolate chips
1 cup Chopped nuts
42 lrg Marshmallows
In large saucepan melt sugar, milk and butter together to soft boil stage.

Remove from heat and add chocolate chips and marshmallows. Add vanilla and chopped nuts. Pour into buttered 8 or 9 inch square pan and let harden.

Splenda can very easily subtitute sugar, but it's not going to substitute cream cheese. You need the consistency and moisture of the cream cheese to make the fudge... well, fudge. Without it you'll probably get a fudge rock. Good for abusing people, not so much for eating.

If you want to avoid using cream cheese you'll probably need to find a vegan recipe. Just use any search engine or try allrecipes.com
