Does anyone know a good recipe for cold chicken sandwiches? You know, the kind with the cold, mushy chicken (I think it has mayonnaise in it). Anyways, any delicious recipe will do.

If you want the chicken salad with mayo- pick and choose from these ingredients (or use them all) and voila- chicken salad
couple tsp of mayo
fresh rosemary (chopped finely)
chopped red onion
chopped walnuts
some crumbled gorgonzola cheese
chopped chicken
Mix it all up and serve on lightly toasted french bread

Start with a really good bread. If your chicken salad already has mayo in it, then add a little bit of curry powder to it and some chopped green onions (scallions)--put it with fresh spinach, tomatoes and cheese if you like. You can grill the sandwich or serve as it. It will be delicious.

Nice thick brown bread, thin layer of salsa, fresh sliced mango and of course leg meat from a chicken no mayo

sounds like chicken salad. make it like tuna salad only substitute chicken for tuna. i like to add a little garlic.
